Created by Dubai-based pastry chef Reema Siraj, the inspired cake was included in the Cake Talks Oman cake exhibition where the best of the best are invited to display a custom creation. When Reema was approached to take part in the annual exhibition, she knew she had to “go big or go home,” and big she did. In fact, her massive masterpiece, which brought her much media attention, all started with her fondness for everything lace, fabrics and pearls.With intricate details and embellishments, the model-esque structure was designed after a dress by Beirut wedding gown designer, Ziad Nakad. Reema explains the process. “I made the delicate flowers with wafer paper, and each one has a different-sized edible pearl in the center. The dress has over 2,400 individual, hand-crafted edible flowers. Lace is another major feature of the cake, with over 3,000 individual lace flowers covering almost 90 percent of the dress,” says Reema. “The other big task was the buttons, considering it is a life-sized structure, 94 buttons fastened into 94 loops, all made with fondant.”
Although Reema lives in Dubai, she is actually from Sri Lanka, and she first obtained her degree in teaching, because, as she says, “My mother is a home baker and, I have seen first-hand how challenging it can be. So I became a teacher instead.” But she couldn’t deny her talent and soon, she found herself excelling at the one thing she tried not to do and, a master she has become.
“The reason why I chose to do a dress was because I was targeting a global audience,” says Reema, “but if I had an opportunity to make a lehnga, that would be a very interesting project for so many reasons. It would be my greatest honor to be able to play with bold and bright colors adorned with stunning and heavy workmanship that are the key elements of a beautiful lehnga. Undoubtedly, I would love to make an absolutely stunning lehnga given the time and opportunity.”
In face, one cake that she has made, inspired by a Sabyasachi lehnga, was so admired by her Indian audiences, that Sabya wrote her a personal email expressing his appreciation.
